I'm about to make the following, which is major comfort food from my childhood (fairly indicative of the fact that my dad's family is genetically predisposed not to have high cholesterol). Yum.
German Potato Salad
6 potatoes
1/2 lb bacon
4 Tbsp bacon grease
3 Tbsp flour
1/2 c sugar
1/2 c vinegar
1 c water
1/2 c pickles, diced
1/3 c onion
summer sausage, optional
1. chop and boil potatoes
2. fry bacon, drain (saving grease as needed), and crumble
3. combine grease and flour in the bacon pan, adding sugar, vinegar, and water. Cook, stirring until thick.
4. add onion and pickles, pour over drained potatoes
5. chill in a 2 qt baking dish and cook later at 350F for 30 min (with sausage on top) OR cut up sausage, add to hot potato mixture, and eat when heated through
