mac & cheese

Right before Thanksgiving, on a night that I could ill-afford the time, I came across this idea for homemade mac & cheese (though the actual recipe is one link further). It looked amazing, so I made it. My biggest mistake was not using much sharper cheese, and I probably should have used a smaller pan than a 9x13, but I'll make it again for sure. Maybe I'll try blending the "sauce" in my Magic Bullet. Oh, and what I originally thought were diced tomatoes were, in fact, red peppers. I ended up using canned, diced tomatoes and didn't like the flavor they added to the dish. Next time I'll either use fresh ones or keep them out.
