moo shu vegetables

One of the trials and travails of my family's Thanksgiving experience was my dad's temporary, doctor-ordered no meat, no fats, no oils, no alcohol diet. Most of the Thanksgiving day food was adapted in one way or another, but there were still plenty of meals we needed to eat while I was home. I was excited to traverse the internet to find something that we all could enjoy and as a group we landed on Moo Shu Vegetables cobbled together from a few different sources. Here's my best approximation of the result:

much Olive Oil-based cooking spray
a plop of minced garlic
a bag of broccoli slaw
a bag of shredded cabbage
some red pepper flakes
some garlic flakes
generous squirts of lime juice and teriyaki

served on flour tortillas with either plum sauce, soy sauce, or extra teriyaki

This was extremely yummy.
